Banana Cinnamon ‘Porridge’

This dairy and grain free ‘porridge’ will give you energy and satiety to keep you going strong until lunch. The key ingredient green banana flour contains resistant starch, which is a superfood for our microbiome (gut flora). When our gut bugs consume resistant starch, they produce beneficial short-chain fatty acids, particularly butyrate, which is the preferred fuel for our enterocytes (cells that line the gut wall). Resistant starch also assists to balance blood sugar levels, increase absorption of nutrients and decrease absorption of toxins.

Free from: gluten / grains / refined sugar / lactose / soy / dairy

Ideas: You can swap the banana for any fruit, fresh or dried, add sliced nuts, nut butter, other spices, maple syrup, this is THE most versatile recipe! Green banana flour is very filling, being a resistant starch, so this bowl of goodness should keep you going for many hours!

Ingredients

1/4 cup organic green banana flour
1/2 cup organic desiccated coconut (+ extra for garnish)
1 brown onion (large brown, cOrganic cinnamon powder ((quantity to your liking. I use 3 tsp) + extra for garnish)
1/4 cup pure coconut milk (for drizzling over to serve (use another milk if you prefer))
1.5 cups boiled spring/filtered water
1 banana (peeled and sliced)
raw honey (optional)

Instructions

In a mixing bowl add the flour, coconut and cinnamon

Stir well then add some of the boiling water. Stir and add more water until a thick texture is created

Spoon into a serving bowl and top with sliced banana, a drizzle of coconut milk and honey to serve. Garnish with coconut and cinnamon.
