Ingredients

Strawberry Layer

500 grams fresh strawberries (pureed smooth)
1/4 cup cup water
2 tablespoons gelatin
1 teaspoon honey ((optional))
1/4 cup boiling water

Cream Layer

400 milliliters organic coconut cream ((can))
s1/2 teaspoon Queen’s vanilla bean paste
2 teaspoons Nutra Organics gelatin
1/4 cup cup boiling water

Instructions

Grab a small saucepan and place on a medium heat.

Pour in the pureed strawberries, water and honey and stir well.

Heat until the mixture is simmering and then remove from the heat.

In a small bowl, place 2 tablespoons of gelatin.

Pour over 1/4 cup of boiling water, until the gelatin is fully covered and starts to absorb the liquid and dissolve.This is called ‘the bloom’. Stir gently.In a small bowl, place 2 tablespoons of gelatin.

Once fully dissolved, pour into the strawberry mixture and stir well until fully combined.

Pour into a shallow glass dish and place in fridge for 3 hours Once strawberry layer is set (should feel like jelly to touch) , repeat steps above for the cream layer, placing the coconut cream, and vanilla bean in a saucepan to heat. Add in the ‘bloomed’ gelatin once removed from the heat and stir well. Pour cream layer over the set strawberry layer and place back in the fridge to set.
